Altair lost his ring finger because it showed that he as the user was committed enough to the blade, it also needed to be removed because that's where the blade comes out of and the ring finger would be in the way. That's why in Assassins Creed 2 when Ezio first gets his hidden blade Leonardo da Vinci jokingly tells him to put out his ring finger in order to cut it off. Ezio on the other hand does not need to get his finger cut off because over the years the hidden blade has been modified. It also shows he is so dedicated to the cause he will not fall in love and get married. As there is now no ring finger to put the ring on.
