It was Gronk, on one of his numerous trips looking for Y'eggs along the sea shore.
Somewhat like his accidental discovery of Y'eggs, coconuts were thought to be furry rocks until he kicked one against another "rock" and it started to ooze a clear liquid. Thinking it might have really been an animal and it was bleeding, he tasted this "blood" and found it to be sweet and very good. Wanting to get more he bashed the creature with a large stone and discovered the white substance inside. Again, sweet, tasty and a "meaty" consistency. Carrying the "critter" back to the camp, he proudly showed his discovery to Sheila his mate. Sheila had become accustomed to her mate's bizarre discoveries and quickly decided to try to use this with the Y'egg as an alternative to the popular wooly mammoth barbeque. Since the meaty substance held together fairly well, she picked it out of the fuzzy rock and mashed it into the Y'egg. This resulted in a yellowish paste and did not look particularly appetizing. Gronk figured out that raw Y'egg was the problem, so they got their "Yron" rock and heated it up. Once the paste was sizzling on the yron rock, it gave off an appealing odor and quickly became a hit around the camp fire. So it was that maccaroons were born. Thus, coconuts became known in the Tropics as "the other white meat". It was apparent that this meat did not especially have to be cooked which made it a popular new staple in the traveler's food supply. Gronk the chef had made another spectacular discovery. I'd heard you could ride coconuts.....

One other benefit (other than being able to eat and drink the coconut) is that the coconut husk can be used for a number of great uses. For e.g, to ignite a fire.
