There were only two Jedi to have a purple lightsaber. They were Mace Windu and Adi Gallia. Mace Windu was the only member of the High Jedi council that had a purple lightsaber.

Each lightsaber contains a crystal, unique to the jedi/sith that wields it. To complete their jedi training, a jedi must find the crystal to complete the construction of their own lightsaber. In the early days of the galaxy, the Sith had both purple and red lightsabers, while the jedi have yellow, blue, and green. Later on, the Sith abandoned (for the most part) purple lightsabers, and jedis that are on the light-side of the force, but can also wield dark-side powers for good purposes, wield a purple lightsaber. Mace Windu, for example, uses a purple lightsaber because he can also use the dark side; his lightsaber form requires him to use it.

When Anakin became Vader his Lightsaber didn't magically become red. And as for "Jedi can't change their names," Obi-wan changed his name when he went into hiding (although not a huge change) to Ben Kenobi. However, Shaak Ti was a Master and Member of the Council by the time of Episode 3. But I understand why this question would be asked.

Not really a rank, but more of a status. Having a blue lightsaber means that you are a warrior jedi, probably closer to the front lines. Green means that you are more of a meditating jedi. Staying at the temple and becoming more "one with the force." Purple and others have meanings too
