You can store your thick meat in a large freezer used in many restaurants or meat selling companies. If that's not available then I suggest just using your own freezer but having a section specifically for thick meat.

Wrap it up in tinfoil or brown paper that is meant for wrapping meat in, and store it in your freezer. Meat keeps longer in the freezer than it does in the fridge.
