The year, make, model and engine info would help. Running todays cars without a thermostat may trip the check engine light to come on. The engine needs to reach and maintain normal operating temperature to run correctly.

You can take the center out of the thermostat, but it needs the rest of it in place to slow the coolant down so that it stays in the radiator long enough to cool down. If you take it out completly, the car will overheat. The engine is designed to run at a predetermined temperature by the thermostat, more than likely 195 drgrees F. If it doesn't reach that temp the check engine light will illuminate. The code set will tell you the engine has failed to reach required temp.
