Not true that Muslims are vegetarians. There may be some vegetarian Muslims but this is by their own choice and preference and not per religion. Eating meat is not forbidden in Islam except what is explicitly mentioned in Quran and prophet sayings to be prohibited to eat.

Beef, as long as it is slaughtered according the process of dhabiha, is permitted for consumption by the Qur'an. It is not required for Muslims to eat beef (they could be vegetarians, etc.), but permitted. As a result, those Muslims who do eat beef do it because they like the taste or need the nutritional value or both.

However, some are, as they believe that the conditions for Halal (permitted) meat can never be met in a large scale farming system. The rules of Halal are partly about hygiene, but are also intended to save the animal from suffering and distress - no animal should know that another has been killed, for example - and this is almost impossible in a modern slaughterhouse.
