Most of the animals are not white, the polar bear is not really white they are really black, if you shave a polar bear they are black not white.
They need to be white, so they won´t be eaten by their enemies that fast... it´s kind of safer for them. The polar bears are black underneath the white fur so they ca keep their body temperature much better.
