Because the people who are involved in this business don't think even for a moment of what they are really doing other then make as much money as possible as quickly as possible. It would not be efficient to worry about that sort of thing.

no its actually a different process. the animal body gets stiff very fast after death which is know as rigor mortise and make the process of skinning impossible. and when skinning is done through force, it tends to tear and lessens in quality.
and hence there is a need for the animal to remain conscious or alive during the process of skinning.
