Because,

In alkenes&alkynes,there exists atleast One double bond(pi bond) which is relatively weaker than sigma bond(There are no pi bonds in alkanes.Hence they are saturated).Hence they are unsaturated.

Aromatic compounds are neither saturated nor unsaturated they show dual behaviour, but due to absence of localized pi bonds they usually do not undergo the addition reactions but some addition reactions as Photochemical halogenation and catalytic hydrogenation are also known,.

Alkenes and alkynes are called unsaturated because they have other than single bonds within their structure. Alkenes have a double bond and alkynes have a triple bond.
