I don't think all assisstant teachers are mean. Some are some aren't, it depends.
But I don't think that's your question. If they are mean it's probably because they're not paid much and waiting for their "real" job to start. Being an assisstant teacher is the job people pick if they didn't do good in college or high school and can't get the main job as a real teacher.
Being an assisstant is also stressful filled with the jobs the real teachers don't want to do.

If you mean in the usual context in an office environment, an individual who 'assists' the office would be "Office Assistant" Depends on industry sector.. But to run errands would typically to assist someone, so assistant will generally be in the title
