Why are coins minted every year?

Coins are minted to keep up with demand. Every year a certain number are damaged, lost, stolen, or just plain hoarded so the number in circulation would drop unless new ones are made.

But in fact, not every denomination is minted every year. In the past, if economic activity was low due to a recession or depression, some denominations might be skipped entirely. For example there were large numbers of most coins on hand in 1921, so during the economic downturn of 1922 only cents and dollars were minted. During the Great Depression of 1929-34, some denominations were suspended for multiple years. Recently, only small runs of nickels and dimes have been made because of the current (2009-10) recession.

Because coin collecting has become a major hobby in the last few decades, the Mint now tries to issue every denomination every year. Many collectors pride themselves on being able to assemble sets with every date. Because they're willing to pay a premium for uncirculated or proof coins, the Mint is happy to oblige by minting those special coins even if they don't make any regular ones for circulation. Examples are $1 coins dated 2002 to 2006, and half dollars from most of the first decade of the 2000s.

Are pennies dated for every day of every year?

Coins only carry the year of issue, not the day or month. If you are asking if they are minted every day of the year, that depends on demand. The recession of 2008 reduced the demand for coins so the Mint didn't have to run as many shifts. If you are asking if they're only dated for the year they're minted, that's normally the case. The only time coins carry a different date from the calendar is if the Mint is given authority by the government. The last time it happened to any great extent was when the composition of dimes, quarters, and halves was switched from silver to copper-nickel. To avoid creating instant rarities the Mint used up the last silver by making 1964-dated coins well into 1965, and 1965-dated coins were made from late '65 to mid '66.

How old does a US coin have to be to be valuable?

Before 1965 in most cases. While error coins can be found on any coin from the earliest coins to the present, all other coins that are valuable were minted before 1965. Any dime, quarter, or half-dollar minted before 1965 was minted in 90% silver making it worth more than face based on that only, no matter how common the year was.

What is the difference between a proof set and a mint set?

A mint set contains uncirculated coins from a specific mint in a specific year. Proof coins are specially made for collectors, minted with a higher quality finish, even mirror-like on some surfaces. Currently in the U.S., mint sets are available from Philadelphia and Denver, while proof coins are minted in San Francisco.
