"Pip" is a very old word. It was reportedly used as early as 1604. The word "pip" can be used as either a noun or a verb.

The word "pips", as it relates to dice, is an alternative name for the the colored spots or dots used to identify the die value. The same name is used for the dots found on dominoes.

Pips (or dots) were used on early playing cards to signify a specific suit and value. It stands to reason, albeit speculation, that the term "pips" originated on playing cards and has since been adopted to describe the value on a die.
