Cocktails began being made from the leftovers of a cask of ale which were called rock tailings. These tailings from different spirits were mixed together and sold at low prices and were called cocktails.

Way back then, I also wonder why drinks are called cocktail, since there are lots of cocktail bars here in hk, it got me curious and make me searched for what's the real score. Then I have read lots of tales of stories (read here to know more about the tales: http://www.todayifoundout.com/index.php/2014/07/origin-word-cocktail-alcoholic-drink/) behind the history of cocktails, but the official definition of a "cocktail" according to the modern Merriam-Webster Dictionary is "an iced drink of wine or distilled liquor mixed with flavoring ingredients."
