A gene codes for a particular amino acid. All biochemical functions depend on the shape of proteins (like enzymes) and these proteins depend on the correct combination of amino acids, get one wrong then the shape (structure) of the whole protein can change into a form that makes it useless, and if the body can't make a particular protein then it can lead to illness and death - THAT is the importance of a single gene.
