You could use grease, but then you'd need a lot more force just to push the grease through the system. A runnier liquid is easier to move around.

80 /90 gear oil but I am having trouble finding where to add as others are. The hydrostatic drive transmissions might take 80/90, but the manual 5/6 speed transmissions take Bentonite Grease. The grease is similar in consistency to wheel bearing grease, but is high-temp, water resistant, extreme pressure grease.
You don't grease the brake drums/rotors or shoes/pads, nor rollers. For s-cam foundation (drum) brakes, there should be grease zerks on the s-cam housing and slack adjuster.

I don't know what you mean by clutch grease, but the clutch master cylinder uses dot 3 brake fluid as a hydraulic.
new pads should come with caliper grease. You dont need to use the grease but if you dont your brakes will like to squeak. It goes between the metal side of the pad and the caliper. If you dont have the grease some high temp grease will work fine.
