Three things:
- There are overweight members of the royal family, they are just not "public figures". Remember there are several dozen if not hundreds of members of the direct royal family.
- The Royal family represent their people and culture so being over weight is just not done.
- They are "specifically bred" to be good looking including naturally healthy weight. As royalty you get to chose from the best available spouses and are encouraged to marry other aristocrats, again very good genetics.
