There are several reasons. First, the words Israelite and Hebrew have long been used to refer to all Jews, particularly when the word Jew was seen as having such negative connotations that it was not used in polite company -- 1800 to 1950 in much of the English-speaking world. So, some other word was needed to refer to someone from the modern nation state named Israel. Second, the wurris "ite" is a Latin ending, and modern Israel discourages use of Latin in favor of Hebrew. The "i" suffix has a common grammatical role in Hebrew -- it forms a possessive, not really the right grammatical form for a demonym (word referring to people from a place) but not wholly wrong.
