Most software comes 'compacted' on the disk - it needs 'unpacking' before use. Additionally, when new programs are installed on the hard-drive - changes are made to the computer's registry - so the computer knows where on the disc the program is located, and connections are made to other programs (printer drivers for example).

Installing simply sets the program up for use by Windows and other relevant programs. Simply copying the program to the hard-drive will not necessarily allow it to work correctly.
