If you are having trouble peeling a hard boiled egg (that thin membrane is not coming off of the shiny egg white, thus making the shell come off in very small pieces and it's taking forever), chances are the egg meat has not shrunk away from the shell. This can usually be solved by placing the hard boiled egg in ice water for a few minutes so the meat will contract.

Eggs will be hard to peel if you use eggs that are too fresh. Look at the "Use by" or "Sell by" date on the carton and wait until a few days before that date to cook the eggs. You should also not boil the eggs. Heat the water until nearly boiling and then cook the eggs on low for 20-22 minutes (for large eggs).

Hard cooked (or hard boiled) eggs can be difficult to peel if they are improperly cooked. Cooling them very quickly after cooking them can often make the peeling easier. Cooking them too long can make peeling more difficult.

The problem with peeling hard boiled eggs is that there is some tendency for the egg to stick to the shell, so that when you are peeling off the shell, you get egg coming off with the shell. You may notice that there is a membrane underneath the shell. If you try to peel the shell off of the membrane it won't work very well, but if you can peel the membrane and shell off together, that generally does work very well.

There is a very thin membrane under the shell which acts a little bit like cling film, helping the shell 'cling' the egg, an easy way to resolve this is to peel the egg in cold water, or better still under a cold running tap, the water gets under the membrane and the shell is removed easily.

The fresher the egg, the harder it is to peel when it is hard boiled. I know this because I have a friend that owns a turkey barn.

take them out of the pot with a spoon and run it under really cold water.

the shock loosens the shell and makes it a lot easier to peel :)

How do you peel a hard boiled egg -?

After the egg is boiled, place the egg in a container with ice. The shell of the egg can easily peel off when the egg is cold. After it is cold, slightly crack the shell then begin to peel it off. But, remember that some eggs are hard to peel even when they are cold. Good luck! Add a pinch of salt to the water before you boil the eggs, it will make it easier to peel later. When the eggs are done pour off the hot water and add ice cubes place a lid on the pot and shake it back and forth, the ice will crack the egg shells.
