Spirits are distilled in order to get a purer form of alcohol than normal brewing and fermentation can yield. The MASH is brewed and fermented to produce the alcohol and then heated to evaporate the alcohol away from the mash into a cooling device to collect in a separate container. Since alcohol has a lower boiling point than water, the evaporate contains a higher concentration of alcohol

Moonshine, by it's very nature is illegal to make. If you are licensed to distill spirits then you legally make distilled spirits not moonshine. Moon shine got it's name from the illegal stills being operated by the shine of the moon, in the dark of night. Some distilled spirits similar in manufacture to moonshine are vodkas, tequilas, and Everclear* distilled spirits, which are all proofed and bottled immediately after being distilled. Licensed distilleries pay a tax for each bottle of spirits distilled, moonshiners do not pay the tax, are not licensed and operate outside established legal jurisdictions. Anything that is taxed and licensed therefore is not moonshine.
