Well, since the thylakoid is the site in which the light dependent reactions occur, and ATP and NADPH are produced for the Calvin cycle it would be better to have stacks of them instead of one large thylakoid. Stacks of thylakoid would ensure more ATP and NADPH to be produced which in turn will mean more carbon fixation.

The thylakoids are stacked in grana because it has proven adventagous and more efficient over time. The light reactions of photosynthesis require a membrane to work because of the chemical gradient of protons that has to be built up to power the ATP synthase. Having grana instead of lone thylakoids increases the surface area of membranes in which the light reactions can take place.
