You use clean water because otherwise you stand a chance of catching a disease, perhaps subsequently dying.

If you are going to drink water, you should ensure that it is clean because if it is dirty, you may be drinking water containing deadly bacteria and viruses, as well as solid matter, such as biomass or faeces. Drinking these is detrimental for your health, so it is not advised.

For bathing, if the water is dirty, and you have any broken skin, the wound may turn septic and you could die from infection. If you bathe in dirty water in general, you stand a good chance of coming out dirtier than you went in. In that case, you have gone backwards in personal hygiene. If you were then to eat using your hands, you may catch an infection carried from your hands by the food, and again you may become infected, hence why we was our hands before eating. In addition to food poisoning, if you bathe in dirty water, people will smell you, walk away from you, and never come near you or talk to you again. That is why you bathe in clean water.

For purposes requiring sterile or distilled water, clean water must be used as it is pure and untainted, and nothing else is suitable for the job. Would you be happy to be operated on by surgeons who washed their hands and instruments with dirty water?

Clean water can be sought from many good rivers and streams; as long as it doesn't look muddy or stink, it should be relatively safe. The issue may be that that a carcass may have fallen in the river upstream, in which case you may still catch a disease. In any case, flowing water (tap water or stream water) is safer than stagnant water (puddle, pond).
