Because they do not do what we think they do.

Lemmings are alleged to hurl themselves off cliffs to their deaths, in large numbers.

This is a myth which originated in a film by the Disney company.

It doesn't happen.

They are not extinct because they fit their environmental niche and have no pressures on them which they cannot meet.

Lemmings are very common rodents, cyclic in their population, being abundant some years, and just common the next.
