Maybe they escape because they don't like you..... or they don't like being in a cage..... or if you don't keep them in a cage then they might not like the habitat....or maybe you just a bad pet keepeer! That's a sensible answer

It depends on how calm your gerbil is outside of its home. If he is not calm outside of his home then you probaly shouldn't take him anywhere. Anyway, if he is calm then you should put him in your pocket. If you put him on your shoulder then he will freak out. There are no leshes for gerbils. Most kittens or cats dont bother gerbils or hampsters. But, some cats have been known to eat gerbils so, if u have a cat make sure it cant get to your gerbil, or dont have a cat at all if you want a gerbil.
