Well, if you eat after you are done, you could ruin their work. For example if you have a fluoride treatment and you eat, it will not work. If you drink anything, you may rinse off the fluoride. Besides it would probably taste really bad :]

It would depend just WHAT you're eating. Stay with soft foods, such as scrambled eggs, milk-shakes, soft tuna casserole, etc. Keep away from "hard" foods that require "chewing". This ususally lasts for about 3 to 4 days after the extraction. "Smoothies" are great. And take your vitamin pills.
