Why are all oils kosher for the menorah but not for lighting shabbos candles?

Because the menorah may be relit or adjusted if the flames are spluttering, whereas the Shabbat-flames may not. Also, although the menorah should continue burning (at least 1/2 hour) after being lit, the main thing is the lighting itself. Whereas the Shabbat candles are there to provide shalom bayit; so the act of kindling them doesn't yet fulfill their purpose.

What does the candles on the seder table represent?

The two Shabbos (Sabbath) candles represent Zachor (Exodus ch. 20, remember the shabbos) and Shamor (Deuteronomy ch. 5, keep the shabbos). All of the Yamim Tovim (festivals), Pessach (Passover) included, are also termed "shabbos" and share in many of the shabbos laws and observances, including lighting two candles shortly before the holy day begins.

When do you take the menorah down?

The tradition is that you light the menorah after nightfall (so that the light is easily seen) and allow the candles to burn down all the way before taking it down. The exception is on erev Shabbat, when you light the menorah shortly before sunset and do not touch the menorah until nightfall the next evening (so as not to violate the Sabbath). Aside from questions of Sabbath observance, there is no tradition requiring that the menorah be displayed when it is not actually holding burning candles.

Do all Jewish faiths practice shabbos?

Well, we're supposed to -- "Remember the Sabbath day" is the only holy day that made it into the Ten Commandments, which makes it the most important holiday of all in the Judeo-Christian tradition. Ways of celebrating the Sabbath (Shabbos or Shabbat, depending on the transliteration) vary widely, but they all involve spending time with family and not working. The definition of "not working" varies a lot!
