For one, the AC compressor is belt driven off the engine, so the inverter would do no good there. Second off, it would take a very powerful inverter to run an AC system, and the wiring from the alternator to the battery, the battery to ground, and the engine block to ground is designed only to handle what the stock electrical system needs - such an inverter could put too much of a draw on those wires and cause a fire.
