There have been carburetor diesels. There are still if you are into model engines. The carbureted engines of old weren't very efficient and I suspect this is why they aren't around any more.
Diesel engines have a very wide AFR (air fuel ratio) under which they will operate. From a very lean 40:1 at idle down to 3:1 at max power. Add to this, the only way to control ignition in a diesel engine is control when the fuel hits the cylinder, fuel injection is the only answer. It allows not only when, but how much and how often. Today's diesels don't just inject the fuel in one big squirt, this would be inefficient and smokey. Today's diesels have multiple injection events per power stroke to insure more complete use of all of the fuel. This makes them more powerful, efficient, and cleaner burning. A carburetor would not allow this kind of precise fuel control.
If you have picked up on the inference, diesel engines aren't throttled. That is to say, there is no control to restrict the incoming air on a normally operating engine, just the amount of fuel injected.

Depends on your engine.. pretty sure the 351 Windsor had gone to fuel injection by that point, so there won't be a carburetor on it. If you have the 7.3 Powerstroke diesel, that still used natural aspiration in that year, and you'll see it on top of the engine.
