The question as to why some people see spirits or ghosts dressed in specific clothes has puzzled researchers for a long time.
If the ghost is a residual haunting, meaning the activity plays over and over again stuck in an infinite loop, then it may just be the energy of a monk still walking around where it used to live and work. Residual hauntings have no control over anything, and will always appear the same, no matter how many times you catch it. That's the simple answer...
...the more complex answer refers to intelligent hauntings which should, conceivably, be able to change their appearance. One theory pertains to the fact that a spirit is a consciousness which has a memory, and the image that is projected to us is the spirit's own memory of its appearance.
If spirits let us see themselves based on their own self perception and their own memories, then it stands to reason that we're seeing a spirit the way it remembers itself. A monk will probably remember itself dressed in monk's robes, the same way a hospital patient may return to us wearing a hospital gown.
