Because Buck wanted some meat to eat. Initially he shot the moose because moose are game animals and good for eating, but then the bear came and raided Buck's storage supply of moose meat. So Buck had to hunt the bear down so it wouldn't come back and raid his food supply again. And of course, bear meat is also good to eat, even though it's a little tougher and stringer to chew on.
