Genesis chapters 1 and 2 are very confusing for most people and can seem to say that God created man (both male and female) of the sixth day, and only then created Adam, with Eve created even later. This can be understood better if you realise that there are actually two creation stories in Genesis. The first is in Genesis 1:1-2:4a and is attributed to an anonymous source now known as the Priestly Source, while the second is in Genesis 2:4b-25. The problem begins when readers, unwilling to accept that there can be disjunctions between the two creation stories, try to find ways to treat the two stories as one.
The story of Adam and Eve should be read quite separate from the previous creation story. In the first story, God created man and woman together on the sixth day, although it is unclear whether he created only one man and one woman, or a whole group of humans. In the second story, God began his creation with the creation of Adam and ended his creation with the creation of just one woman, Eve. Just as you should not think of the second creation story as some sort of summary of the first, do not think of the first creation story as preceding the second in time.

He simply did not. For many in Judeo-Christian belief systems, there is only one Creation account given in Genesis 1 in outline fashion, in a 7 (24 hour) day specific sequence - with man being created on the 6th day. The split for some comes in the Genesis 2 account as some read this as a separate accounting of creation while others simply do not read it as such.
For those who do not see 2 separate accounts but only one Creation telling, the accounts in Genesis 2 are intended to be complementary/supplementary details of the pinnacle creation 'man' and the final part of that creation 'woman' out of the man. For the reader then, Genesis 2 concentrates upon the 6th day only of Creation week - the making of man called Adam - and the subsequent making of his 'help meet or meet help or fit helper,' Eve while in the Garden. Thus, the human family begins and it is through these first two humans that many will be intended to be changed at their Judgment process into sons and daughters of the God Family - eternal and spiritual members or born-again.
What is important to remember is that we are individual human beings with free will and a grand intellect/imagination. This will lead many of us on different interpretative readings of the same materials. As far as the Scripture is concerned, yes, there is much in plain text, easily gleaned by those who read it. But much requires God's Spirit to open up the meaning of things that are currently being hidden from those who chose not to accept them:

So that everything had been prepared for us already. Also, God doesn't have time ( hours, days, years ) so to Him, it could have all been at once, but on earth it was the sixth day.

The book of Genesis doesn't indicate how many ribs Adam started out with. It even doesn't say which side of the rib cage supplied God with the means for creating Eve. The only thing that's known for sure from the Biblical account is that Adam ended up with one rib less than he started out with, and that the missing rib went into making Eve.
