After the western Greek citiy-states led by Sparta had defeated the Persian navy at Salamis, the Persians could not feed their army during the oncoming winter and had to send half of it home. The remaining half, with 40,000 Greek allies, was therefore now about the same size as the southern Greek alliance of city-states. The difference was that the Persians had strong cavalry but unarmoured infantry. The Persian infantry could not stand up to the Greek armoured infantry and relied on their cavalry to harass the Greeks. So the Greeks selected Plataea as the right place where they could fight over broken ground where the Persian cavalry could not get at them. The result was the defeat of the Persian army.

The Peloponnesian War 431-404 BCE devastated Greece. Sporadic warfare continued to weaken the city-states, enabling Persia to regain control of the Greek cities in Asia, and the weakness opened the way for Philip of Macedonia to establish hegemony over the cities of mainland Greece. His son Alexander conquered the Persian Empire and after his death his generals carved his empire up amongst themselves, dominating the Greek world.
The 27-year Peloponnesian War was between Athens and its empire, and the Peloponnesian League of Greek city-states led by Sparta. The Persians intervened late in the war by giving the Peloponnesians the money to get a fleet able to stand up to the hitherto dominant Athenian fleet, so causing Athens to lose the war.

The war lasted 50 years 499-449 BCE. The Persian aim was to bring the Greek city-startes under control to stop their incessant wars spilling over and destablising the Persian Empire. After initial successes, the Persians suffered a succession of defeats. They decided to make peace, secure their borders, and left the Greek city-states to continue to destroy each other.

Their various nomadic tribes settled in fertile valleys with mountains around them, developing independent city-states. The had no desire to amalgamate with other cities which might exploit them, and lose their prized independence and self-determination. The city-states formed leagues to promote their self-interest, but changed sides over time as self-interest dictated.
The Persians did not have a war with Sparta. They invaded mainland Greece to put an end to their interference in supporting uprisings of Greek cities in Persian-ruled Asia. They were repelled by a coalition of city-states from southern Greece, of which Sparta was but one.
