Most of the parables are in the Gospels of Matthew and Luke. This is because the authors of these gospels copied a good deal of sayings material attributed to Jesus from the hypothetical 'Q' document. However, Q provided no context for those sayings, so the authors of Matthew and Luke had to create their own context and place the sayings at convenient places within their gospels. It was easier in some cases just to have Jesus talking to the disciples and progressing from one parable to the next, without any apparent logic or reason.

People learn best through metaphors and stories. Jesus knew this, so he used parables (stories) to illustrate his points. Something which tends to be lost through the ages is that most of the parables Jesus told were parodies of those taught by the Pharisees. His audience would have thought they knew the end, then would have been surprised by the twist in the tale.

His parables are stories that are easy to remember that contain some truth he wanted to teach. Since he taught by speaking, not writing, this was an excellent way to enable his hearers to recall what he taught.
Jesus didn't just tell stories. Each story had a message. A purpose. If he just taught people the ones who didn't care would understand his message and mock him. He taught in stories that had the true meaning hidden. These are called parables. To those interested and to his followers to true meaning was revealed through the holly spirit.
