Yes, you will get to pick from Pegasus coats. If you put Medusa's Blood on after you put on the Golden Apple your horse will keep it's golden apple coat, and not have any wings. It would still get the skills bonus, however.

If you have it in your inventory, click on the words, choose with a golden apple from my inventory, pick the horse you'd like to give it to, and choose the coat you'd like from the list. The coats are different for unicorns, pegasuses, ponies, and horses. Js, there's not much for a unicorn pegasus pony.
