this answer below is WRONG! they also look good in red Because they were used to clear the way for Firetrucks in a time when horses still pulled them. I don't know why it was only dalmations,but it was.

Dalmatians were originally bred to run with horses and carriages because of their great stamina. They also guarded stables at night from thieves. Later, fire crews were carried by horse and cart, and Dalmatians were used in the same way. They calmed the horses at the scene, and cleared the streets for the fire cart to pass. But after fire trucks began use, the Dalmatian acts as just a simple mascot.

The reason is because dalmations weren't afraid of the horses that the fire "trucks" back then used. Also they would bark so people would get out of the way. Soon though they used trucks instead of horses and the dogs got scared of the sirens. Also it was not safe for the dog to run with the truck. The fire fighters felt bad so they carried on the tradtion even if the dogs didn't help.

(they could protect the horses from other dogs, other animals)
and in addition they could calm a horse near fire.

Back when the way to travel was by stagecoach the dalmatian found its purpose serving as a guardian of horses. Dalmatians seem to have a calming affect on horses and would be trained, back then, to run along side them. By doing this they could make sure that other dogs didn't bark and scare the horses. As this task grew in popularity so did dalmatians. Soon the fire service, who at the time also used horse drawn carriages, found them particularly useful. They would have dalmatians run alongside the carriages as they raced to get to the fire and the dogs helped guide the horses. This in turn helped keep the horses from becoming spooked by all the chaos. The firefighters also had the dalmatians guard their equipment when they were away from the fire department. And we can't forget the Dalmatian's occasional heroic act rescuing a firefighter from a burning building.

No other dog has been found to be quite as useful to firefighters as the dalmatian. Which is why they continue to be the most popular "Firehouse" dog.
