So the question is why did He disappear when they recognized Him?

How did they recognize Him? It was because He took the time to walk the long journey with them and expound on the Scriptures the things concerning Him and also the way He broke bread.

"Did not our hearts burn within us while he talked to us on the road, while he opened to us the Scriptures?" From Luke 24:32

"how he was known to them in the breaking of the bread. " Luke 24:34

My opinion is that He wants not just the two disciples, but all of His followers to see Him inside the Scriptures and not just bound and see Him in a physical form! Because His limits are beyond the ways of human logic! God is the God of faith! He loves it when there is faith in Him, in His power. He loves it when His people walk by faith and not by sight! =)

Not just that, I think Jesus is a great example of how we tell others about Jesus. To do it from the Scriptures, with patience even if it's a seven mile walk or more. And even willing to stay the night with them and eat with them!(Although He disappeared from their sight)
