Many did, and many tried, but were foiled. Their masters kept a very sharp eye on them, and it was difficult for them to succeed.

I think most of the slaves did fight back because they were captured, and it was not fare that they had to work for nothing. They had to work day and night for their owners or they would kill them, or just beat them and maybe even starved them as a punishment.
