Tyrannosaurus rex didn't choose to hunt Triceratops over other animals. The most common herbivores at that time and place were Triceratops and Edmontosaurus. Tyrannosaurus definitely hunted Edmontosaurus regularly, probably more often than Triceratops.
Dimetrodon, which lived before dinosaurs, which includes Triceratops and Allosaurus, had even existed.

In 1887, a skull roof with two horns belonging to Triceratops was found in Denver, Colorado. Paleontologist Othniel Charles Marsh originally misidentified as a prehistoric bison. In 1888, John Bell Hatcher found a much more complete skull of Triceratops in Wyoming, and then Marsh realized his mistake. Both of these specimens were assigned to the new genus Triceratops.
Who would win? First, why would t-rex attack triceratops. Research shows that t-rex would prefer to scavange other kills or feast on animals that had died of disease or old age. If it couldn't find anything dead it would attack hadrosaurs or sauropods before going for triceratops. Triceratops' weapons and defenses were : thick skin, sharp beak, large frill, big horns. Its weakness was its neck, which was defended by its frill. T-rex's weapons and defenses were: Sharp teeth, Strong legs. The rest of its body was a weakness. Its arms were useless. When you add it all up, triceratops would win.

If King Kong attacked Triceratops first, King Kong can win by slamming Triceratops with a tree. If Triceratops attack King Kong, King Kong can still win by its ability to jump to the sides. Then, King Kong can kick Triceratops on the side, injuring it. Soon, King Kong gives Triceratops a fatal blow. First, some clarification. Gigantosaurus is today said by paleontologists to be a "nomen dubium" (a misnomer). The original find, over time, was shown to be bones from at least three different sauropods. The thinking today is that the partial "gigantosaurs" find was actually a Barosaurus, an enormous sauropod related to Diplocodus. That said, it was an herbivore, just like Triceratops. It can't be said that it didn't kill a triceratops, only that it's very unlikely - generally speaking, the two animals would have had no issues with each other.
