There are several reasons that Israel came out on top in almost every Arab-Israeli engagement and almost always increased their land holdings (while diminishing those of Arab States).

2) Modern Military Tactics and Armies: Israel used cutting edge tactics and (when it was available) more advanced military technologies. As a result, they were better able to fight larger Arab forces and still come out on top. Recently disclose documents show that Israel had a better understanding of the terrain in Sinai than the Egyptians.
3) Actual Will to Win: The Arab States while desiring the win, wanted the win for its secondary effects. The defeat of Israel would grant more legitimacy to Arab Socialism, take people's minds off of their economic problems, become a rallying point and so on. Many Arab leaders spent more time preparing the Victory Parades than the marches that would get them there. Israeli forces, by contrast, needed to win to survive as a nation. The win itself, and not ulterior motives drove Israelis to fight.
4) Need Every Win: This is similar to the previous answer, but slightly different. Israel is such a small country that a single loss could be disastrous. Thus, the Israeli mentality is to win every battle and every war or else all could be lost. The Arab States conversely found small (and large losses) to be acceptable while waiting for the opportune moment to get the one victory they need. This makes the Arab States less concerned about any single loss.
5) Expansionist Defense: The more territory Israel controls, the more effectively it can defend any of its territory. Therefore, a lot of Israeli strategic planing has been over how to increase strategic Israeli holdings.
