Unless individual sects of Christianity have a constitution, I don't know of any Christian constitution. My understanding of a constitution is that it is a blueprint for a political system. The Bible is not a constitutional writing, in my understanding.
It was called the "Federal Convention" when it was going on and shortly thereafter. Now it is referred to as the "Constitutional Convention." This was because the delegates assemble to write amendments to the existing Articles of Confederation not a new constitution. They decided that the Articles of Confederation were hopelessly defective and could not be fixed by amendments. Only a new form of government would suffice, therefore they set about writing the Constitution. Thus, it could never have been called the Constitutional Convention while it was being held.
The Constitutional Convention of 1787 was originally intended for the states to revise the Articles of Confederation. However, when all the representatives assembled in Philadelphia, the convention quickly became a meeting on how to create a new government instead of fixing the current one. The Convention led to the writing of the US Constitution and thus, all three branches of the American government: Executive, Legislative and Judicial.

The Mexican Constitution was the first successful constitution Mexico had and used, and it has influenced the Mexican government for decades since its writing.
