Poppies were the flowers universally planted in so many European graveyards and military cemeteries after the First World War ( Great War ).
The black centre would represent the black tiny seeds of the Poppy flower.
Thus the Poppy flower became symbolic of the many war dead we need to remember and reflect on, on Remembrance Day.

In 1980 The Royal Canadian Legion remembrance day poppies centers were changes from black to green, to represent the 'green fields of France.' In 1986 The Royal Canadian Legion decided to change the centers back to black because that is the actual color of the center. But they still had a large quantity of green material so they decided that they will continue making green centered poppies until they run out of green material. It wasn't until 2002, that they ran out of green and started using black again.

The reason being, for those who attend a local Remembrance Day ceremony, the tradition is to lay your poppy on the cenotaph after the ceremony. If you continue to wear your poppy after November 11th, it shows that you did not attend a ceremony or lay your poppy in respect, thus can be seen as a sign of disrespect.
