Angel food cake is very delicate. You cannot touch the cake, even one time, when you have your cake in the oven. If you do, it will fall every time. You cannot move it, touch it, prick it, or any form of movement near the oven when you are baking the cake. I have seen it every time. They are delicate and cannot be moved or touched during baking time.
There are a few reasons a cake could fall apart, such as:
It was too warm when it was taken out
It was not finished baking
It was stuck to the pan
It was too wet
Not enough oil or butter or too many eggs or too much flour or you forgot an ingredient
it might be because someone might be in front of you or not and you get nervous if and or
cakes rise when they bake because of the baking powder and or baking soda causing it to spill over the pan, or just cause you filled it to much and it did not have enough room to rise.
It's to do with science. no-one really knows how or why.

This will happen if there was not enough moisture in the cake or if you over-baked it.
That should not happen, and it does not need to happen. This probably occurs because the cake is either too dry, too crumbly / weak, or you are pressing and spreading the icing around too hard.

You really don't need to change the recipe. The only thing I would suggest is baking the cake with duck eggs (if you can find them) instead of chicken eggs because they make the cake hold better. They make the cake less crumbly or unstable. Hope this helps. :)
