every night when awoken by dry mouth which means to wake evry hour just to drink a glass of water. not enough saliva to keep mouth wet and not cotton mouth. is there something in the body that it may be lacking which produces more saliva at night?

Probably not; it would have to be VERY cold to cause a sore throat. A more likely explanation would be humidity; if you sleep with your mouth open, then your throat can become dry if the air itself is dry. Put a humidifier in your bedroom to keep the air at least 35% relative humidity. Or, keep your mouth closed and learn to breathe through your nose when you sleep. It's better for you, anyway.
