Actually, they ate quite a lot of meat.
Just bear in mind that whenever they'd sacrifice animals to the gods, they'd then eat the meat themselves. They wouldn't have left it go to waste.
For example, only for one festival of Zeus, they'd sacrifice 100 bulls.
