Saliva production is constant, and is increased by several factors: food seeing, smelling; memories, emotions, eta. As it is constant, we might not be able to sense it, but it is there. Maybe if you remain with your mouth closed for a while, it accumulates within and the moment you open the mouth it might just come out.
