This is not quite true. there are seven sacraments. Some of them- Baptism, Confirmation, Holy Orders ( being ordained a Priest) are ( one-shots) as they are said or believed to leave an indelible mark on the soul. -and thus special. on the other hand penance (confession) and the Holy Eucharist ( Communion) are intended for frequent and repeat action. The Last rites- well that is not necessarily a one-shot as many people have periodic sick calls and may well recover. on it goes. I am not aware of the explanation of three sacraments being received or performed at once- this is not, in my experience, quite accurate- though some- Weddings- are tied into the Mass structure- thus a Nuptial ( wedding oriented) Mass. so one would have two sacraments- as communion is part of every mass.

Why are the sacraments of eucharist and confirmation often celebrated to gether?

Actually the question assumes facts incorrectly. Most Catholics do not receive these two sacraments together. Part of the challenge is logistical-only a Bishop can confirm a catholic while ordinary priests can perform first eucharist. The majority of Catholics are born into the church and the normal process is to have First Eucharist and Confirmation as separate events years apart.

Why and what could you receive the three sacraments once?

The three sacraments that can be received only once are: Baptism, Holy Orders and Confirmation. Of course, Holy Orders is limited to men. Each of these sacraments has a specific purpose, which once received, need not be administered again. Baptism ushers the recipient into the Church making him / her a Christian. Confirmation brings with it the gifts and fruits of the Holy Spirit making the recipient a "soldier" of Christ. Holy Orders makes the man receiving the sacrament a priest forever.

What two Christian rites are important for Catholics?

The Catholics have Seven Sacraments that (Because Catholics are Christians) and they are all important. You are confusing Christian for protestant. Protestants only have two sacraments (if they call them sacraments) that would be Baptism and the Lord's Supper. Catholics view any Baptism that is administered with water in the name of the Trinity as valid, so Baptism for protestants is a valid sacrament. Holy Communion, however, is not, because they have no priesthood. But, since protestants deny that Holy Communion actually is the Body of Christ (as Our Blessed Lord Himself said repeatedly in the second half of the sixth chapter of St. John's Gospel), the only thing that it has in common with the Eucharist is the name and the outward form.
