Because fundamentalist religions, or any other kind of absolutist ideology, impairs the brain's ability to engage in critical thinking and causes people under it's influence to behave in an irrational manner.
Specifically, Gideons (like many other fundamentalist Christians) believe that anyone not who does share their exact set of religious beliefs is doomed to eternal damnation. Therefore, they try to convert other people to their religion to "save" them from this imagined fate. Gideons do this specifically by leaving Bibles in hotel rooms, under the belief that travelers are outside of their comfort zone and therefor are more vulnerable/receptive to their message.
In reality, this desire to convert everyone to their belief system is a psychological defense mechanism designed to reassure themselves that their beliefs are correct and to insulate themselves from opposing opinions and factual information that contradicts their ideology.

The Gideons are not actually a denomination of Christianity, but a Christian organization officially called "Gideons International" whose mission is to spread the word of God by handing out Bibles to people who might never otherwise encounter it. So the Gideons don't have specific beliefs (like whether Jesus is completely God or if he was something else) and can come from a variety of denominations.
