For many years, the Church of Jesus Christ has advised its members to store food and necessities as a way to be prepared should they come upon hard times, a year's supply. Church leaders have given this counsel for many many years, and they still do.
They store other foods as well as wheat because they believe a time is soon coming when such things will not be commonly available according to prophesy, so there has to be enough in storage to carry the Mormons through such a time. A Mormon family is supposed to have saved up enough of everything they need, including money, to live for a year without replenishing anything. I'm not sure how you'd manage to pull that off with perishables, though.
You can chew wheat for gum from the wheat kernels. We read in the old testament, (king James version), Joseph encouraged pharaoh store enough wheat to last through seven years of famine in answer to pharaoh's dream.. Wet, moldy wheat should not be used. You can get a table sized wheat to break the kernels into pieces for "wheat mush." add raisins and sugar or your favorite sugar free ingredient for flavor. The ;Mormons or latter-day saints encourage their congregations to store enough wheat to last two years. Whether or not the seed is safe to consume will depend upon whether or not it has been treated with chemicals. Some crop seed has been treated with fungicides and will usually be pink in color to show that it should not be eaten.
