The actors who PRETEND to be pirates are, for the most part, emulating Long John Silver, the pirate character in Robert Louis Stevenson's adventure novel "Treasure Island", or Peter Pan's pirate character Smee. Which is where Disney's theme park ride "Islands of the Caribbean" got the notion.
Parrots were particularly popular because they were colorful, could be taught to speak, and were easier to care for so the depiction does have some basis in fact, They also fetched a good price back in London

I rather doubt that real pirates with parrots ever taught them to say 'Polly wants a cracker'. More likely they would be taught blood-curdling oaths and other words not meant for delicate ears.
