There are two kinds of confectioners. The first are "factory" confectioners who make candy in big factories. If you're using glucose syrup and it's usually a certain thickness, if you get a batch of it that's half as thick twice as much will flow into the kettle in the same time period and the candy will be too sweet.
A "boutique" confectioner would measure liquids with measuring cups, so the viscosities wouldn't be as important there.
